MAC knives are a combination of the best in Western design and Japanese knife-making craftsmanship. Every knife is shaped, assembled, polished, and sharpened by professional Japanese craftsmen in a series of up to 64 steps to guarantee that every knife is a flawless precision tool.

MAC produces a large variety of quality knives, and is said to have a knife for any cooking purpose. Every knife is razor sharp with comfortable handle and great balance. By making the knives with a hardness between 58 and 60 degrees Rockwell C, the knives can be sharpened with the characteristic "MAC edge" . The MAC edge allows straighter and thinner slicing than the traditional European V-shaped edge, and is far more versatile than the single beveled Japanese KATABA edge.

  • Superior

    The Superior Series Mac Knives consists of 2.0-2.5mm thin blades for less wedging into cuts but with a slightly stiffer feel than the Original Series.  These knives are made using our Superior steel which has an additional processing step called sub-zero tempering for better edge retention than our Original steel.  The elevated handle, rounded tip, and hole in the blade were carried over from the Original series and are designed for better knuckle clearance, safety, and for hanging the knife, respectively.

  • Japanese Series

    The Japanese Series of MAC Knives, consists of various traditional, Japanese shapes such as the Yanagiba (Sashimi or raw fish slicer) and Deba (Cleaver).  The steel used and blade thickness varies depending on the knife, please view each item for specifics
