Tim Mälzer's Shun Premier range has been specially adapted to the needs and requirements of professional chefs. In this first-class range, the properties of the high quality materials of the famous Shun Classic range are combined with a spectacular new look. The blade is divided into three different textures: the part from the back of the blade to the centre has a hammered surface known as Tsuchime.
This texture is followed by a finely frosted damasked grain. The blade ends with a precision cutting edge. The finely crafted blade is combined with a medium brown Pakka wood handle. The particularly hard and resistant blade core steel ensures excellent cutting edge and durable cutting performance.
The new Shun Premier blade is made of extremely hard VG Max steel (61±1 HRC) and is covered with 32 layers of damask steel. This combination of different types of steel makes the blade both hard and soft. The sharpened blade on both sides is pleasant to use due to its low weight and guarantees a clean and precise cut. The surface is hammered by hand, a process known in Japan as Tsuchime, not only for aesthetic reasons, but also to ensure, thanks to the small bubbles that form, that the food does not stick to the blade.
Thanks to its symmetrical shape, it is suitable for both left- and right-handed people. A full-length silk ensures stability and balance when cutting. A special detail is that the end of the handle is engraved with a Tim Mälzer bull's head, the distinctive sign of the professional chef.
