Discover the KAI Shun Premier Tim Mälzer knives, a premium collection of Japanese kitchen knives developed to meet the demands of professional cooking. Handmade in Japan, the series combines traditional Japanese knife craftsmanship with a contemporary design inspired by the requirements of German chef Tim Mälzer.
The blade of the KAI Shun Premier Tim Mälzer features a VG-MAX steel core with a hardness of 61 ±1 HRC, surrounded by 32 layers of Damascus steel on each side. This construction combines an exceptionally hard core with more flexible outer layers, providing a precise edge and stable cutting performance.
One of the most distinctive characteristics of the collection is its blade with three different surface textures. From the spine towards the centre, the blade features a Japanese Tsuchime hammered finish, followed by the characteristic Shun Damascus pattern and a highly polished precision cutting edge. The Tsuchime surface can also help food release from the blade by creating small air pockets during cutting.
The design is completed by an elegant medium-brown Pakkawood handle with a symmetrical shape suitable for both right- and left-handed users. The continuous tang provides stability and balance, while the end of the handle features the distinctive bull's-head engraving associated with Tim Mälzer.
The KAI Shun Premier Tim Mälzer range includes different knife shapes for a wide variety of kitchen tasks, including Chef’s, Santoku, Utility, Paring, Slicing, Bread, Nakiri and other specialised knives.
If you are looking to buy KAI Shun Premier Tim Mälzer knives, this collection combines Japanese craftsmanship, VG-MAX steel, Damascus construction, Tsuchime finishing and a design developed around precision and professional functionality.
