Tamahagane Knives are made by the Kataoka factory in Niigata JaTamahagane knives are some of the best oriental knives on the market. Their high-carbon steel is laminated, hand-folded, and layered. The blade is made of 3 layers, with a VG5 steel cutting edge and outer protective layers of SUS410 steel, producing an extremely strong blade. The handle, handmade, is solid, designed to be comfortable, functional, and durable. Tamahagane knives are traditionally more expensive but of excellent quality and last a lifetime. The comforted wood and resin handle are inseparable and resilient.pan. Choose from 3 of their knife ranges, Bamboo, San and San Tsubame. All three ranges use the same 3 ply material known only to Kataoka. Blocks and sets to compliment the individual knives are also available. The middle layer is VG-5 which forms the edge of the blade. This layer is exceptionally hard (61 HRC)
