The Masahiro knives have an asymmetric special 80/20 Japanesse edge, that is an edge with an 80% sharpen on the rigth side and a 20% on the left. The Masahiro knives steel is MB5 26 stainless stell with a high carbon index which make it stronger, 58-60 HRC
