The Kai Shun White knives are made of VG-10 Damascus stainless steel – easy to clean.

Shun professional knives are crafted using a newly developed stainless Damascus steel with 32 layers. The core is made of V-Gold-10 steel – highly resistant to corrosion, extremely hard (61 ±1 HRC, 1% carbon, 1.5% cobalt), and ensures exceptionally long-lasting sharpness.

Thanks to the convex grind and the hand-honing of each Shun knife, an unparalleled edge is achieved, allowing the blade to glide effortlessly through even the toughest ingredients. This sharpness, combined with the knife's balanced weight, makes cutting easy and comfortable.
